8 oz imperial margarine (2 cubes) 6 oz granulated white sugar (3/4 c) 6 oz brown sugar (3/4 c packed) 2 lg eggs 1 tsp vanilla 18 oz flour (3 1/2 c unsifted) 1 tsp salt 1 tsp baking soda 12 oz chocolate chips, semi-sweet 3/4 to 1 c chopped walnut (optional)
Preheat oven to 350 degrees F. In a separate bowl mix the flour, salt and baking soda and set aside. Cream the margarine, granulated sugar and brown sugar. Add the vanilla and eggs and mix until just smooth. Gradually add the flour mixture and mix well. With the added amount of flour mixture and mix well. With the added amount of the flour in this recipe, the batter will be stiff. This stiffness is what keeps the cookie from going flat in the oven. Stir in chocolate chips and walnuts (if desired) using a wooden spoon.
Form into walnut sized balls and place onto an ungreased cookie sheet. Bake for 12 minutes. Let cool for several minutes but remove while still warm onto a rack for cooling. (Do not fully cool on cookie sheet as they will continue to cook.) Makes approximately 5 dozen cookies.
For best results use thick cookie sheets or two thin sheets placed together. Air insulate sheets work well also. Thin sheets brown the bottoms too much.
Our Recipe's History Dale Bowman, the original owner and builder of the Eagles Nest Inn loved chocolate chip cookies, but had less than satisfactory results from the recipes on the packages. He set out to devise his own perfect version of the recipe with the help of his friends who were also the 12 tasting panelists for the recipe. Various ingredients flour, sugar ratios, margarine vs butter and oven temperatures were varied throughout the testing process. Surprisingly, 9 out of 12 tasters preferred the margarine over butter recipes and 11 out of 12 like the recipes with the increased flour. The majority preferred recipes with the white and brown sugar of equal proportions.
When we were guests at the Inn we also enjoyed the cookies and have kept the tradition alive since taking over the inn in January of 1994 when the cookie count was just 41,021. It has been printed now in many cookbooks. It is the preferred snack at the Inn and always available. Our current cookie count is up 191,200 cookies served as of 2/25/08.
